Ingredients

  • 3 tablespoons of olive oil
  • 0.5 butternut squash
  • 2 red onions
  • 1 courgette
  • 1 pepper
  • 2 carrots
  • 1 sweet potato
  • 50 grams of mushrooms
  • 1 handful of cherry tomatoes
  • 3 florets of broccoli
  • 1 sprig of rosemary

Method

  1. Pre-heat the oven to 180 degrees
  2. Choose veg from the list above as you've got leftover - all of the above is probably too much!
  3. Chop all the veg into chunks (except the tomatoes)
  4. Place in a roasting tray and coat with olive oil
  5. Sprinkle the rosemary over the top along with some salt and pepper
  6. Roast for 30-40 minutes, turning halfway through
