Ingredients
- 3 tablespoons of olive oil
- 0.5 butternut squash
- 2 red onions
- 1 courgette
- 1 pepper
- 2 carrots
- 1 sweet potato
- 50 grams of mushrooms
- 1 handful of cherry tomatoes
- 3 florets of broccoli
- 1 sprig of rosemary
Method
- Pre-heat the oven to 180 degrees
- Choose veg from the list above as you've got leftover - all of the above is probably too much!
- Chop all the veg into chunks (except the tomatoes)
- Place in a roasting tray and coat with olive oil
- Sprinkle the rosemary over the top along with some salt and pepper
- Roast for 30-40 minutes, turning halfway through
