Mushroom Bhaji

Ingredients
- 350 grams of mushrooms
- 1 onion
- 1 chilli
- 2 cloves of garlic
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 0.5 teaspoons of chilli powder
- 0.5 teaspoons of salt
- 1 tablespoon of tomato puree
- 3 tablespoon of water
Method
- Finely chop the onion and chilli
- Fry the onion and chilli on a medium heat for around 5 or so minutes
- Meanwhile slice the mushrooms
- Add the garlic and cook for another couple of minutes
- Add the ground cumin, ground coriander, and chilli powder, cooking for about 1 minute
- Add the mushrooms, salt, and tomato puree and mix well
- Add some water, reduce to a low heat
- Cook for at least 20 minutes, add extra water if getting dry
- Serve and top with chives if you've got some
- Enjoy!
