Ingredients

  • 1 large onion
  • 1 pepper
  • 150 grams of mushrooms
  • 1 tin of mixed bean salad
  • 1 tin of black beans
  • 2.5 tablespoons of fajita spice mix
  • 4 wraps
  • 100 grams of grated cheese

Method

  1. Chop the onions, fry on a medium-high heat for a few minutes
  2. Chop the pepper and mushroom and add to the pan
  3. (optional) add any other leftover veg, e.g. courgettes
  4. Allow to cook for 5 minutes
  5. Add the fajita spice mix (see linked recipe) and cook for a few minutes
  6. Drain and rinse the tins of beans and add to the mixture
  7. Simmer on a low heat for 5-20 minutes time allowing
  8. Make fajitas up on the plate, adding the cheese as required
  9. Also good with salsa, guacamole, sour cream, lettuce
  10. Goes well with tortilla crisps covered in cheese and microwaved for 30s - yum!
