Fajitas

Ingredients
- 1 large onion
- 1 pepper
- 150 grams of mushrooms
- 1 tin of mixed bean salad
- 1 tin of black beans
- 2.5 tablespoons of fajita spice mix
- 4 wraps
- 100 grams of grated cheese
Method
- Chop the onions, fry on a medium-high heat for a few minutes
- Chop the pepper and mushroom and add to the pan
- (optional) add any other leftover veg, e.g. courgettes
- Allow to cook for 5 minutes
- Add the fajita spice mix (see linked recipe) and cook for a few minutes
- Drain and rinse the tins of beans and add to the mixture
- Simmer on a low heat for 5-20 minutes time allowing
- Make fajitas up on the plate, adding the cheese as required
- Also good with salsa, guacamole, sour cream, lettuce
- Goes well with tortilla crisps covered in cheese and microwaved for 30s - yum!
