Ingredients

  • 0.5 small red onion
  • 1 red chilli
  • 3 ripe avocado
  • 1 bunch of fresh coriander
  • 6 cherry tomatoes
  • 4 tablespoons of lime juice

Method

  1. Dice the onions and tomatoes and place in a bowl
  2. De-seed the chilli and chop finely and add to the bowl
  3. Chop the coriander up finely and add to the bowl
  4. Scope the avocado out and roughly chop up into small pieces on a cutting board
  5. Add the avocado to the bowl and pour the lime juice over the top
  6. Season with salt and pepper
  7. Mix the mixture well and serve
