Tomato soup

Ingredients
- 1 onion
- 1 clove of garlic
- 1 teaspoon of oregano
- 1 teaspoon of dried basil
- 2 tins of tomatoes (can also use fresh tomatoes, around 800g)
- 1 tablespoon of brown sugar
- 1 large potato
- 500 ml of vegetable stock
- 1 sprigs of basic (to serve)
Method
- Chop the onions, crush the garlic, chop the potato
- If using fresh tomatoes, chop those reasonably small
- Saute for a couple of minutes
- Put the kettle on and mix the stock when it has boiled
- Add the dried oregano and dried basil, and saute for another couple of minutes until the onions are soft
- Add the tomatoes, stock, potatoes, and sugar
- Bring to the boil, then turn down to a simmer for 30 minutes
- Whizz with a hand blender
- Serve with some crusty bread and sprinkled with basil!
