Ingredients

  • 1 onion
  • 1 clove of garlic
  • 1 teaspoon of oregano
  • 1 teaspoon of dried basil
  • 2 tins of tomatoes (can also use fresh tomatoes, around 800g)
  • 1 tablespoon of brown sugar
  • 1 large potato
  • 500 ml of vegetable stock
  • 1 sprigs of basic (to serve)

Method

  1. Chop the onions, crush the garlic, chop the potato
  2. If using fresh tomatoes, chop those reasonably small
  3. Saute for a couple of minutes
  4. Put the kettle on and mix the stock when it has boiled
  5. Add the dried oregano and dried basil, and saute for another couple of minutes until the onions are soft
  6. Add the tomatoes, stock, potatoes, and sugar
  7. Bring to the boil, then turn down to a simmer for 30 minutes
  8. Whizz with a hand blender
  9. Serve with some crusty bread and sprinkled with basil!
