Tofu Mushroom Pasta

Ingredients
- 6 cloves of garlic
- 1 small bottle of white wine
- 350 grams of silken tofu
- 0.25 cups of nutritional yeast
- 1 teaspoon of salt
- 1 small of onion
- 450 grams of mushrooms
- 450 grams of pasta
Method
- Finely chop the garlic and saute in some oil in a small saucepan for 5 minutes
- Meanwhile, heat the water for the pasta, and start chopping the onion and mushrooms
- When the garlic is golden add the bottle of white wine and bring to a gentle simmer for 10 minutes
- Start frying the onions in a medium-large saucepan and put the pasta on at the same time
- Once the onions start to brown add the mushrooms along with a generous pinch of salt and pepper, cook for around 8 minutes
- Meanwhile, the garlic and wine should be done, add to a blender along with the tofu, nutritional yeast, and salt
- Once the mushrooms are cooked, add the creamy sauce
- Once the pasta is cooked and drained add that to the pan and mix well
- Garnish with fresh thyme if you've got it
