Ingredients

  • 6 cloves of garlic
  • 1 small bottle of white wine
  • 350 grams of silken tofu
  • 0.25 cups of nutritional yeast
  • 1 teaspoon of salt
  • 1 small of onion
  • 450 grams of mushrooms
  • 450 grams of pasta

Method

  1. Finely chop the garlic and saute in some oil in a small saucepan for 5 minutes
  2. Meanwhile, heat the water for the pasta, and start chopping the onion and mushrooms
  3. When the garlic is golden add the bottle of white wine and bring to a gentle simmer for 10 minutes
  4. Start frying the onions in a medium-large saucepan and put the pasta on at the same time
  5. Once the onions start to brown add the mushrooms along with a generous pinch of salt and pepper, cook for around 8 minutes
  6. Meanwhile, the garlic and wine should be done, add to a blender along with the tofu, nutritional yeast, and salt
  7. Once the mushrooms are cooked, add the creamy sauce
  8. Once the pasta is cooked and drained add that to the pan and mix well
  9. Garnish with fresh thyme if you've got it
  10. Enjoy!
