Tofu Bites

Ingredients
- 280 grams of tofoo
- 0.25 cups of cornflour (40g)
- 2 teaspoons of onion granules (or halve for powder)
- 2 teaspoons of garlic granules
- 1 teaspoon of cayenne pepper (can increase / decrease for more / less spiciness)
- 1 teaspoon of sea salt
- 2 teaspoons of pepper
- 2 eggs
- 2 tablespoons of water
- 0.75 cups of panko breadcrumbs
Method
- Drain the tofu and cut into medium chunks, either 18 or 27
- Get 3 tubs or bowls, small tupperware / takeaway containers work well
- In the first tub mix the cornflour, onion granules, garlic granules, cayenne pepper, sea salt, and pepper
- In the second tub, add the whisked eggs and water
- In the third tub, add the panko breadcrumbs (can do a few and top up as needed)
- For each tofu cube, toss and coat well in each tub in turn (spices, then eggwash, then breadcrumbs) and then put on the side on a plate
- Once all the tofu is done, heat a good amount of sunflower oil in a frying pan on a reasonably high heat
- Fry as many tofu as will fit in the frying pan, turning regularly, it may require batches, keep done ones warm in the oven
- Enjoy with some egg fried rice and a tomato based sauce!
