Ingredients

  • 300 grams of spaghetti
  • 2 onion
  • 4 cloves of garlic
  • 1 courgette
  • 125 grams of mushrooms
  • 500 grams of vegetarian mince
  • 1 kg of passata
  • 2 tablespoons of tomato puree
  • 2 stock cubes
  • 0.5 cup of red wine
  • 150 grams of cheddar cheese

Method

  1. Chop the onions and crush the garlic and fry on a medium heat (6-7) for around 5 minutes
  2. Chop the courgette, fry for another couple of minutes
  3. Chop the mushrooms, fry for another few minutes
  4. Add the mince and cook for around 5 minutes until properly defrosted and mixed in
  5. Add the passata, tomato puree, stock cubes, and red wine and mix well
  6. Simmer on a low heat (5-6) for as long as you can get away with, preferably 20-30 minutes
  7. Boil the pasta for 12 minutes
  8. Serve the pasta, with a helping of the sauce on top and sprinkle with grated cheese
  9. Enjoy with a glass of red wine from the now open bottle :)
