Ingredients

  • 4 eggs
  • 1 small onion
  • 1 chilli
  • 100 grams of mushrooms
  • 2 cups of cheddar cheese
  • 50 grams of blue cheese (e.g. cambozola or stilton)

Method

  1. Finely chop the onions and chilli and fry for 5 minutes in a flat frying pan on a low heat (level 6)
  2. Chop the mushrooms and add to the pan for another 5 minutes, add a spoon of water if the mixture is looking dry
  3. Whisk the eggs with salt and pepper to taste
  4. Reduce heat (level 5), add the eggs, and cook for another 5 minutes
  5. Sprinkle the blue and cheddar cheese on top
  6. Place under the grill for 5 minutes or until the cheese has lightly browned
  7. Serve and enjoy!
