Omelette
Ingredients
- 4 eggs
- 1 small onion
- 1 chilli
- 100 grams of mushrooms
- 2 cups of cheddar cheese
- 50 grams of blue cheese (e.g. cambozola or stilton)
Method
- Finely chop the onions and chilli and fry for 5 minutes in a flat frying pan on a low heat (level 6)
- Chop the mushrooms and add to the pan for another 5 minutes, add a spoon of water if the mixture is looking dry
- Whisk the eggs with salt and pepper to taste
- Reduce heat (level 5), add the eggs, and cook for another 5 minutes
- Sprinkle the blue and cheddar cheese on top
- Place under the grill for 5 minutes or until the cheese has lightly browned
- Serve and enjoy!
