Curried Nut Roast
Ingredients
- 225 grams of mixed nuts (any will do)
- 2 onions
- 1 green pepper
- 75 grams of breadcrumbs (two slices)
- 1 clove of garlic
- 1 teaspoon of mixed herbs
- 1 tablespoon of mild curry powder
- 225 grams of fresh tomatoes (four large tomatoes)
- 1 egg
Method
- Finely chop the onion and pepper
- Blitz the nuts and breadcrumbs in a blender and crush the garlic
- Finely chop the tomatoes
- Fry the onion and pepper in a small saucepan for around 10 minutes until soft
- Meanwhile preheat the oven to 200 degrees
- Mix the nuts, breadcrumbs, carlic, mixed herbs, and curry powder together in a large bowl
- When the onion and peppers are cooked, stir them into the mix along with the tomatoes
- Beat the egg in a mug and finally add that to the mixture and mix well
- Pack the mixture into a baking tin and bake for 30-40 minutes
- Enjoy with lots of gravy!
