Curried Nut Roast

Ingredients

  • 225 grams of mixed nuts (any will do)
  • 2 onions
  • 1 green pepper
  • 75 grams of breadcrumbs (two slices)
  • 1 clove of garlic
  • 1 teaspoon of mixed herbs
  • 1 tablespoon of mild curry powder
  • 225 grams of fresh tomatoes (four large tomatoes)
  • 1 egg

Method

  1. Finely chop the onion and pepper
  2. Blitz the nuts and breadcrumbs in a blender and crush the garlic
  3. Finely chop the tomatoes
  4. Fry the onion and pepper in a small saucepan for around 10 minutes until soft
  5. Meanwhile preheat the oven to 200 degrees
  6. Mix the nuts, breadcrumbs, carlic, mixed herbs, and curry powder together in a large bowl
  7. When the onion and peppers are cooked, stir them into the mix along with the tomatoes
  8. Beat the egg in a mug and finally add that to the mixture and mix well
  9. Pack the mixture into a baking tin and bake for 30-40 minutes
  10. Enjoy with lots of gravy!
