Leek and Potato Soup

Ingredients
- 2 leeks
- 1 carrot
- 1 potato
- 3 cups of water
- 2 stock cube
Method
- Chop the potato, carrot and leeks and fry in a little butter (or oil) for 4-5 minutes
- Add the water and stock and bring to the boil
- Turn down the heat and simmer for 20 minutes
- Whizz with a hand blender until smooth
- Optionally stir in some double cream or milk and add salt and pepper to taste
- Serve up with some warm bread
