Leek and Potato Soup

Ingredients

  • 2 leeks
  • 1 carrot
  • 1 potato
  • 3 cups of water
  • 2 stock cube

Method

  1. Chop the potato, carrot and leeks and fry in a little butter (or oil) for 4-5 minutes
  2. Add the water and stock and bring to the boil
  3. Turn down the heat and simmer for 20 minutes
  4. Whizz with a hand blender until smooth
  5. Optionally stir in some double cream or milk and add salt and pepper to taste
  6. Serve up with some warm bread
