Leek Fritters
Ingredients
- 2 leeks (450g)
- 2 eggs
- 50 grams of sour cream
- 85 grams of plain flour
- 1.5 teaspoons of baked powder
- 0.5 teaspoons of ground cumin
- 0.25 teaspoons of turmeric
- 0.25 teaspoons of cinnamon
- 25 grams of cheddar cheese
- 2 tablespoons of parsley
Method
- Chop the leeks reasonably small
- Fry the leeks for about 5-7 minutes until soft (you can use the same pan later to cook the fritters)
- When the leeks are done, take them off the heat and put to one side
- While the leeks are cooking, crack the eggs into a medium bowl, add the sour cream and beat well
- Sift the flour and baking powder into bowl
- Add the cumin, turmeric, and cinnamon and gently stir it together
- Grate the cheese and add to the bowl
- Chop the parsley and add to the bowl
- Once the leeks are done, add them to the bowl as well
- Season with salt, pepper, and optionally chilli flakes and mix it well, it should be a thick batter
- Heat some oil in a frying pan and add large heaped spoons of the batter, it should make 5-6 fritters
- Cook until the bottom is golden brown and then flip, if doing batches, put in the oven to keep warm
- Enjoy with some garlic bread and sweet chilli sauce!
