Halloumi and Sweetcorn Fritters

Ingredients

  • 100 grams of halloumi (about half a pack)
  • 325 grams of tinned sweetcorn
  • 75 grams of plain flour
  • 1 teaspoon of baking powder
  • 1 egg
  • 0.5 cup of milk (soya milk is fine)
  • 1 red chilli
  • 4 spring onions
  • 1 handful of coriander

Method

  1. Chop the halloumi into small pieces, finely chop the chilli, spring onions, and coriander
  2. Sift the flour and baking powder into a large mixing bowl
  3. Beat in the egg and milk until the batter is smooth
  4. Add the chopped halloumi, chilli, spring onions, coriander, and the sweetcorn
  5. Season lightly with salt and pepper and mix well
  6. Note: the next bit might need finessing a little bit!
  7. Heat a couple of tablespoons of oil in a flat frying pan on a medium-high heat (7.5)
  8. Once the oil is hot, add dollops of the mixture to the pan (about a mixing spoons worth per dollop)
  9. Keep an eye on the fritters, turning if they look like burning
  10. Once cooked on both side, remove from the heat and keep warm
  11. Top up the oil in the pan before starting on the next set
  12. Serve with some warm focaccia
